Soup’s on!

Soup’s on in my kitchen no matter what season, and it is easy to make and cheap to make as well.

I love chicken noodle soup as it is my comfort food, served with/without crackers or baguette bread! The soup also stands perfect alone. I find using leftover pre-cooked chicken is the best for flavor and then adding the broth.

It is my mother’s recipe. No matter how hard of a day I have at work, or a hard run, having some chicken soup makes me feel better.  I am told I make a mean soup!

Christine Blanchette’s Homemade Chicken Noodle Soup

Ingredients: 

Chicken pieces.

1 container of Chicken Broth

2 whole carrots

1 small onion

6-8 white mushrooms

Pepper

Pasta – your favorite noodle shape

Directions:

I use left over chicken pieces from a pre-ready cooked chicken.

Take a medium sized pot and cook the whole pre cooked chicken carcass in boiling water

Remove from the water the carcass, and remove the chicken pieces

Add chicken broth

Cut carrots into small pieces

Cut onion into small pieces

Cut mushrooms into small pieces

Add the vegetables to the soup

Add about a handful of pasta or enough to make it thick

Add lots of black ground pepper or to taste

You add whatever other vegetables.

Serves 6 depending on how much you like

Summer salads, ace healthy eating

Summer is right around the corner and BBQ season has begun, but not everyone becomes excited about burgers and steaks straight off the grill. It’s also summer salad season. Let’s be honest, salads are a tad better for the waistline and there are many options when it comes to this food form. Here are a couple of healthy and delicious options for those who want to mix things up and bring some unique flavours to the next neighbourhood get-together.

Watermelon and Feta Cheese Salad

 Ingredients:

1/4 c. extra-virgin olive oil

2 tbsp. red wine vinegar

1/2 tsp. sea salt

3 c. cubed seedless watermelon

1 c. medium cucumber, chopped

1/2 c. coarsely chopped mint

1 c. crumbled feta

Whisk olive oil, red wine vinegar and salt in a small bowl. In a large bowl, combine cubed watermelon, cucumber, and mint. Pour contents from the small bowl over the watermelon mixture and top off with cubed feta and sea salt.

Fresh Broccoli Salad

 

Ingredients:

2 heads fresh broccoli

1 red onion

1/2 pound bacon

3/4 cup raisins

3/4 cup sliced almonds

1 cup mayonnaise

1/2 cup white sugar

2 tablespoons white wine vinegar

Place bacon in a deep skillet and cook over medium high heat until evenly brown. Cool and crumble. Cut the broccoli into bite-size pieces and cut the onion into thin bite-size slices. Combine with the bacon, raisins, your favorite nuts and mix well. To prepare the dressing, mix the mayonnaise, sugar and vinegar together until smooth. Stir into the salad, let chill and serve. This makes 9 servings.

Southwestern Pasta Salad

Ingredients:

1/2 (16 ounce) package rotini pasta

1/3 cup vegetable oil

1/4 cup fresh lime juice

2 tablespoons chili powder, or to taste2 teaspoons ground cumin

1/2 teaspoon salt

2 cloves garlic

crushed1 1/2 cups whole kernel corn

1 (15 ounce) can black beans, drained and rinsed

1/2 cup diced green bell pepper

1/2 cup diced red bell pepper

1/2 cup fresh cilantro leaves1 cup chopped roma (plum) tomatoes

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. In a large bowl combine oil, lime juice, chili powder, cumin, salt and garlic. Stir in pasta and set aside to cool to room temperature, stirring occasionally. Stir in corn, beans, green pepper, red pepper and 1/2 of the cilantro leaves. Spoon onto a platter and garnish with tomatoes and remaining cilantro. Serve chilled or at room temperature.

I love gifts that have thought behind it, like personal touches, For instance, last Christmas my niece gifted me a homemade brown sugar and lemon hand scrub, which smelled just as delicious as it sounds. Hot Chocolate Mix

It’s rather fun to put together deconstructed kits. There is nothing better than some homemade hot-chocolate on a chilly winter night. All you would need is some mason jars, ribbon,  hot cocoa mix, mini marshmallows, crushed candy-cane for topping, and any additional ingredients you choose. There are so many variations: try creating melted snowman hot chocolate by using white chocolate and decorated marshmallows or add a small bottle of Baileys to your chocolate kit for an adult-friendly beverage option.

Sugar Scrub

The options are almost endless when it comes to choosing the ingredients for your sugar scrub. Sugar scrubs are easy to make and make easy and thoughtful gifts. For instance, if your sister loves lavender, consider adding lavender oil to the mix. With a base of brown sugar and coconut oil, adding additional ingredients will be easy.

 Hydrating Face Mists

There is nothing like a little burst of a facial mist to brighten your day. These face mists are easy and portable, and will keep you going on those long days. Depending on the skin type you want to target, you can try a green tea hydrating mist for dry or sensitive skin. Combine water with green tea bags and rosewater, and put it in a spray bottle. The best thing is that these mists can also double as natural toners.

Cookie Mix

Back to the idea of putting together deconstructed ingredients, why not put together your own little d-i-y baking kits for your loved ones or friends. Measure out the appropriate ingredients for your favourite cooke mix and layer in a mason jar or bundle a collection of tubes. Feel free to write out your own recipe card to include with the gifts for an even more personalized touch. The same can work for cakes and other pastries.

Bath Bombs

D-I-Y bath bombs are fun and easy to make. Using a base of baking soda, epsom salts, and citric acid, you can combine different essential body oils and essences to come up with the perfect scents. You can also add colour, glitter, and even petals to your homemade bath treats.

Raw Vegan Mock Tuna Salad from Love Wild Live Free

Eating a fresh and raw salad in the summertime is one of the healthiest and easiest ways to stay cool from the gut-wrenching heat. One of my favourites is a refreshing raw vegan mock tuna salad.

Love Wild Live Free, a vegan food and lifestyle blog by Avra Epstein, offers a yummy raw mock tuna salad recipe that uses affordable, fresh ingredients to make a light (but filling) meal that will leave you vying for more. This raw recipe uses organic ingredients and also includes kosher dill relish with live probiotics, an easy way to get additional bacteria that keep the gut healthy.

Ingredients:

  • 2 cups raw sunflower seeds
  • 5 tablespoons RawFoodz French Onion Dip
  • 2 celery stocks, finely chopped
  • 3 tablespoons fresh lemon juice
  • 1 tsp dried dill
  • 2 tbsp Kosher dill relish (with live probiotics)
  • 2 tsp Dulse Flakes, or Nori Flakes
  • 1 tbsp finely minced onion (red or sweet white)
  • Pink Himalayan Salt and freshly ground pepper, to taste
  • (use organic ingredients)

Directions

  1. Rinse sunflower seeds and place in to a medium size bowl. Fill with filtered water, leaving a few inches of space above. Cover with a clean towel, secured with an elastic band. Allow to soak 6-8 hours.
  2. After the soaking time is up, rise sunflower seeds again. Add to food processor and pulse to chop into an even consistency, scraping down with a spatula as necessary. You do not want to over process otherwise you will end up with a creamy consistency. Instead, you’re going for a crumbled consistency that resembles flaked tuna.
  3. In a large mixing bowl add chopped sunflower seeds and the remaining ingredients. Stir to combine.
  4. Serve chilled and store in an airtight container in the refrigerator.

Enjoy this delicious salad and experience the rejuvenating feeling of eating raw and healthy foods.

Recipe: Vegan Taco Pizza

What are the two best comfort foods in the world? Pizza and tacos. If you put them together, it creates the ultimate treat that will leave you wanting more. Homemade pizza is easy to make and absolutely delicious. It is also surprisingly healthy if made with vegetables.  Over the long weekend, give this pizza a try!

Ingredients:

Homemade Pizza Crust:

  • A packet of active dry yeast
  • 1 tsp white sugar
  • 1 cup warm water
  • 2 ½ cups flour
  • 2 tbsp olive oil
  • 1 tsp salt

Toppings:

  • 1 can of black beans
  • 1 can of Pizza Sauce
  • Chopped tomatoes
  • Avocado
  • Crushed tortilla chips
  • Handful of chopped onion
  • Vegan ground round with taco spices (if desired)
  • Daiya cheese or another vegan cheese alternative (if desired)

Directions:

  1. Make homemade vegan pizza crust by mixing all ingredients and turn dough out onto a flat surface that has been sprinkled with flour.
  2. Roll the dough into a circular shape and roll up edges to create a crust.
  3. Put the toppings on the pizza, beginning by spreading the tomato paste on the crust first.
  4. Put all other toppings on the pizza and the vegan cheese as the final ingredient. Feel free to mix in some ingredients not mentioned in this recipe!
  5. Bake at 450 degrees F for 15 to 20 minutes.

Enjoy this delicious combination on a pizza and pass it on to all of your vegan friends! Homemade pizza is a great comfort food and you can put as little or as much of the toppings on, depending upon preference. It is the perfect meal for the long weekend, and goes well with a glass of red wine and a relaxing patio chair.

Maple syrup

One of the most addictive, delicious, yet unhealthy ingredients found in the cupboard is refined sugar. This ingredient causes a host of issues including diabetes, bad teeth, heart disease, and issues with the liver. I can’t stress this enough! Get rid of sugar! Once the kitchen is purged of the toxin, the other options will make you feel better and are healthier for your body by a long shot. Alternatives to sugar are honey, maple syrup, cane sugar, and brown rice syrup. Molasses is rich in nutrients including calcium, zinc and is strong source of iron. Brown rice syrup is one of the only sweeteners that doesn’t have fructose, but all of the alternatives are going to be a better option that regular sugar.

Replacing key ingredients in the kitchen is one of the simplest ways to bake healthy, homemade foods. It will make your meals taste better and will increase nutrients with very little effort needed. Being a responsible consumer and purchasing healthy ingredients instead of processed foods will lead to a healthier and happier life.
