Recipe: Ethiopian chickpea stew

Don’t let the warm weather fool you, the traditional Fall weather will be here soon enough. Often with the change in weather, people start to crave comfort foods — soups, stews and slow cooker recipes are in high demand. Ethiopian chickpea stew is the perfect mixture of everything in one hearty bowl. This stew is originally called Ethiopian chickpea wat.

A wat essentially refers to a stew or curry made by adding different ingredients and vegetables. The mixture of different spices is called berbere and often includes salt, chilli peppers, ginger, paprika etc. So, expect to use different blends and adjust flavours accordingly, especially if you prefer something more spicy.

Ingredients:

  • 2 cans chickpeas ( rinsed)
  • 1 large yellow onion
  • 2 cloves of garlic ( chopped)
  • 1 piece of fresh ginger ( chopped)
  • ¼ cup fresh cilantro ( chopped)
  • 3 large red tomatoes ( diced)
  • 1 ½ cups chicken/vegetable broth or water
  • 1 lemon ( juiced)
  • 2 carrots ( chopped)
  • 1 red potato ( diced)
  • 4 tsp olive oil

Spices ( Berbere)

  • 1 tsp paprika
  • 1 tsp sea salt
  • ½ tsp all spice
  • 1 tsp black pepper
  • ½ tsp cayenne pepper
  • 1 tsp cumin
  • 1 tsp brown sugar

Directions:

  1. Mix dry spices ( berbere) together on one bowl and set aside
  2. Heat the olive oil in a large pot set to medium heat
  3. Add the onion, garlic and ginger and toss in the pan for two minutes or until slightly browned.
  4. Add the lemon juice
  5. Stir in the dry spices, stirring occasionally ,for one to two minutes or until you form a paste.
  6. Add the chickpeas, tomatoes, carrots and potato and pour in the broth or water
  7. Mix well and sprinkle brown sugar.
  8. Reduce the heat to low, cover and let simmer for 25 minutes, checking halfway and adding more water or stock if necessary.
  9. Sprinkle cilantro before serving

This stew can be enjoyed by itself, or with rice and flatbread. In Ethiopia, it is often enjoyed with Injera, a sourdough flatbread with a spongy texture.

4 ways to create your own gourmet kitchen

One of the most important rooms in your house is more than likely your kitchen. You cook there, sometimes you eat there. It becomes a hub of conversation, where friends and family can be creative. One of the things that many people look at when buying a new home is often the kitchen —  it it big enough, bright enough, and does it have state of the art appliances? Many foodies and aspiring chefs (and even amateur ones) love working in a good kitchen. Here are a few tips on how to create your own gourmet kitchen, or at least feel like you’re working with one.

Get Organized

No matter the size of your kitchen, it is essential it be clutter free. This creates the feeling of a grand working place. You should have select storage areas for specialty items and an organizer for everything from your cooking utensils to your excess plastic bags. Keep you kitchen streamlined and know where everything is kept for easy access. In terms of design, keep it minimal and tidy with easy to clean surfaces.

Bright Colours

Thanks to many optical illusions, a room painted in white or even cool bright colours often tend to appear larger. The reflective surfaces of the lighter paint helps a room feel bigger with wider walls. Try to find reflective surfaces that will lighten the room. For instance, white moulding or trim adds depth to a wall and using quality paint provides a bit of shine or gloss helping the flow of light. Avoid darker or muddy colours at all cost. If you want to add a pop of colour to your white space, use colourful appliances.

Invest In The Proper Tools

If you want to work in a high performance kitchen, it might be time to invest in some high performance tools. Try using professionally made pots and pans and especially appliances with a brand you can trust. These products will be worth the investment because they are durable and should last for an extended period of time, making you feel at ease in having a product you can depend on. At the same time, monitor the performance quality of any new appliances you consider investing in and see which one works best for your space.

Gourmet Products

Put the salt and pepper down if that’s your basic seasoning. It’s time to invest in some gourmet spices (and I use the word gourmet as just an upgrade from salt and pepper). Open your mind and your spice rack to different flavours and aromas. Get new spice blends, oils, vinegars and open yourself to trying new flavours. From Peruvian pink salt to pineapple curry, discover new and interesting products.

  1. Cocoa Powder

Cocoa powder is a popular ingredient for alternative chili lovers and can bring out unsuspecting flavours in other ingredients. It also adds a smoky and earthy flavour to the dish, which will reduce the acidic taste tomatoes tend to cause. Be careful not to add too much cocoa powder — a smidge will make a stellar difference.

  1. Beer

Beer is a great addition to chili because each type of beer creates a specialized taste relative to an individual’s pallet. Dark beers add a smoky quality to the dish and hoppier beers add a bit of a spicy kick. The beer evaporates the alcohol content so the dish is safe for kids, but the delightful taste of a good craft beer is left behind for the parents.

  1. Arrowroot Powder and Sour Cream (vegan or otherwise)

Arrowroot can be difficult to find, but it is a staple in many southern dishes, including the classic, Gumbo. Adding the spice and sour cream (vegan variations are available and delicious!) turns the average chili into a southern frenzy. Many of us northerners have never tried REAL Gumbo, so this would be an adventurous option for a winter dinner party to warm the heart and soul.

  1. Veggie Dogs

A less healthy, but yummy, alternative is to thicken your chili and pour it on top of veggie hot dogs. Turning boring chili into chili dogs will cheer up anyone with winter blues — plus it’s a really fun dish for kids. Worried about the mess? Veggie hot dogs can also be cut up and put into the dish for younger children. No need to worry about getting chili on the floor.
